Make sure it is ripe first. Depends on the avocado variety but usually they'll give just a little when you squeeze it gently. They won't be hard as rocks.

I love avocado sliced into salads. Another way is with lemon juice and salt. or just mayonnaise. Also good is to make something like an egg or chicken or crab salad like you use to fill sandwiches and add avocado to it. I was thinking of making a curried egg salad and adding avocado to it.

We had a thread on using avocado in desserts, I think it might have been in the paleo forum. We get kinky sometimes.

one ripened avocado chopped or mashed to make it easier to blend
some lemon or lime juice freshly squeezed
oil- I use canola-EVOO makes it too strong tasting for me (about a cup or as thick as you like)
1 or 2 egg yolks
cilantro optional
a little garlic also optional
some salt if you chose?

I make mine with an immersion blender, adding the oil slowly until you get the taste and consistency you prefer....could add jalapeno for some heat?
Be creative.......it is yummy!

I like avocado sliced with cheese. I wrap a slice of cheddar around a slice of avocado. Then, there's avocado and melted swiss, with just about anything or nothing.

Since it is actually a fruit, I get an avocado, slice it in half, throw it in the bin(garbage can) and then eat some fresh berries with cream on them.....

Really, I am trying to like those little green things....about the only way I will eat them is in an omelet with sausage and onion, shredded cheese and cream cheese. I did mash some up in some refried beans, to cut the carb count of the refrieds, and that was fine in a burrito (low carb tortilla)

But as a whole, yuck.....just not a fave of mine.

Annie, is this mayo green? (Not trying to be a smark aleck, I'm honestly curious.)

My favorite way to eat avocado:

-split it in half, remove pit
-spoon into the cavity some sour cream, crumbled bacon, hot sauce, seasonings, cheese, etc.
-use a spoon to scoop out the yumminess!

I like it mashed up with one of the following:
- about 1 Tbsp of salsa
- 1 Tbsp salsa plus my lemon-flavoured non-fishy-tasting fish oil supplement
- the lemony fish oil plus lots of fresh-ground pepper.

I just eat it with a spoon.

I like mixing my fish oil with something, sometimes, when I'm sick of trying to slug it down like cough syrup.

I agree with what others have said: make guacamole, eat it sliced on a green salad with boiled egg & ranch dressing (makes the salad taste oh so yummy), also love it with chicken or tuna salad

If I am being lazy, I buy the "Numbers Guacamole" from Trader Joe's. It's in a box in the refrigerated section, and it comes with 2 plastic trays of guacamole. It takes pretty good as is, but I usually add some mayo and/or sour cream & a little cayenne to it. Most already prepared guacamole doesn't taste that good (fresh), but this one tastes great. Pretty good value too, as it costs about $3 and has 5 avocados in it. Here in the SF Bay Area, avocados can cost up to $2 each, depending on the season.

All these additions are pretty good, but not really necessary to the way I feel about avocadoes. They are a very enjoyable addition to any meal without any additives -- I love 'em straight! Just cut 'em in half, remove the pit, cut 'em into wedges and peel, then enjoy! They're silky smooth and very mild flavour ... what's not to like!??

PS: .... in Canada, at this time of year they get expensive and the quality is not always dependable -- truly a luxury item!

Glenda, you're correct: when I ate in Mexico, they put nothing in the guac except a bit of lemon juice to prevent browning (I assume), and a tad of salt. It was great.

I'm not sure how it is out West, but here in Ontario, avocados have been on sale in 5 packs for $2.49 at various stores.

cut veggies and fruits into bite size pieces or smaller if preferred, add a tablespoon or two of any fruit yogurt and 2 to 4 tablespoons of cottage cheese, mix and eat....
