I haven't tried these, but I do make faux mashed potato from cauliflower and it's very good, especially if you add a little butter and sour cream when you puree it! It also makes an excellent topping for shepherd's pie - it's not even noticeable that it's not potato then.

I found the shepherd's pie recipe (above). It's awesome! Actually, if you haven't seen Linda's recipe website, you should check it out. She is a cooking genius.

I can't wait to try the shepherd's pie sounds so good...I make the mock potatoes all the time and when I have left overs... I turn them into potato salad. It is so good I even add a little shredded cheese to it.
