Hi, there. Tartare is usually a preparation of raw very fresh meat (in this case, high grade sushi quality tuna).

The traditional recipe uses fresh black pepper and fresh egg. If the recipe is the same, it's all very low carb. If the recipe is not the same, contact the restaurant and ask for the ingredients! It's the best way to find out what you want to know.

You could also have a look in the Kitchen Forum, where Karen (our resident Executive Chef) might have an answer for you. I'll actually 'move' this post there for you, as a matter of fact.

Hope this helps.

Aww come on! Live it up!

A friend and I used to regularly eat albacore tuna tartar wrapped in nori and dipped in soy sauce and wasabi. Delish! The texture is beautifully silky.

BTW, I have the T-shirt that matches your avatar so we must be kindred spirits. In that case, try the tartar.

Karen

Ah, that's why you use frozen fish in sushi, sashimi and tartar. Freezing kills all those critters if they're there.

I got the T-shirt in San Francisco. You could probably find one in LA easily.
