Valkyrie-- half and half is half cream and half milk - it is 10% mf., our whole milk if 4%, our part skim is 2% and 1% and our skimmed is 0% milk fat. Here in Canada we don't seem to have full cream for coffee just whipping cream, I'm not sure the fat % on that.

Hi Jalera...just adding to your post (found this on net).


Light cream, also called coffee or table cream, can contain anywhere from 18 to 30 percent fat, but commonly contains 20 percent. It can not be whipped.

Whipping cream contains 30 to 36 percent milk fat and sometimes stabilizers and emulsifiers. Whipping cream will double in volume when whipped.

Heavy cream, also called heavy whipping cream, is whipping cream with a milk fat content of between 36 and 40 percent. It's usually only available in specialty or gourmet markets.

Half-and-half is a mixture of equal parts milk and cream, and is 10 to 12 percent milk fat, and can not be whipped.


Jalera so you're Canadian too, eh? I grew up in Canada...Edmonton, Calgary. Alta. and lastly Vancouver BC. Miss Vancouver alot
You know what I can't find here in the States?...it's Carnation canned thick cream. It's great on desserts! It has a 25% milk fat content, so it's a "light cream". (info at lowcarbluxury.com). I think my mother-inlaw might have found it? Will have to check it out!
