In my city we have a small deli chain called Denningers and they sell headcheese. They even slice it up for you. It's lovely stuff. I could eat a pound of it in one sitting which is why I rarely buy it for myself.

Gelatin has GINORMOUS health benefits. I get a grass fed powder version I can put in soup or tea.

How could I compete with O's new book? The timing is all wrong, plus she stole my working title for the book. Plus, I'd probably sell like 10 copies to my family and probably only be able to comp 10 or so to you guys that get a laugh from my cooking. Plus, with pictures like this and crude illustrations it will not be an easy sell.

Recipe: Marx Brothers Soup

Begin with a pack or two of duck heads, chop up some celery and add to some bone broth. Stir in some African Pepper Soup mix (Uda, Oziza, Ehirie, White Pepper, etc)...

Illustration...

The illustration is great! Really. Hang onto it for future cover art.

Alas...no duckheads in KC. Then again, I haven't actually looked. Chinese grocery maybe?

Ha, thanks Barbara. Amazing what you can do in 2 seconds on an iPhone these days.

Every duck that I ever met had a head at one point or another. They have to end up somewhere. Better a pot than in the ash bin. Yes, the Asian/Ethnic (whatever that means) stores near me will carry these and many other things that are challenging to me.

We have an asian store here in hamilton called Nations. I love the place and my fav low carb treat are the already cooked chicken feet from their cooked foods counter.

A few years ago, I visited Cambodia. The fresh markets were loaded with beautiful green vegetables, also fish swimming and ducks quacking--pick your (live) dinner, and they'll dress it on the spot. I especially admired large beautifully arranged trays of some kind of meat. Looked tasty, too. Until I found out it was...rat. Strange really how some of us Western finicky people will eat cow but not horse, rabbit but not rat. Also featured in the market: embryonic chicken. Cook and crack and get protein a little farther along than just a yolk!

I did eat tarantula on that trip. I figured if I enjoy soft-shell crab, why not tarantula? Kinda depends on how it's seasoned. Crunchy little dudes.

Best wishes with the cookbook.

With that artwork, Jacques Pepin has nothing on you . . . .

All you need is a beret for your picture on the back jacket.

I went to the big Asian market yesterday to pick up a whole duck but then I saw a 1/2 a duck and I can see that the leg is there but I'm hoping 1/2 a head isn't under there also, I'm getting tired of paying for a hug neck and head which I don't eat, at $2.99 Per pound so I paid a little more for the half at $3.29.

Duck heads, necks and feet, along with the carcass, would make a great bone broth.

I make bone broth from duck feet. It gels up every time.
