Default Demi's orange cakes... the best!

Hi all

I just had to say that I made demi's orange cakes yesterday, and they were the best ! (search orange cakes under forum search for "sweet treats forum")
I didn't have any ground almonds so I used ground hazelnuts, and I didn't have any flavoring so I used lemon and lime juice, with lemon and orange rind!! ok slightly different from original recipe.. but the main idea was there! and it has become a real staple food in my household now! thanks demi! I can't wait to try your delicious chocky cake!

hi everyone....

i have to agree...i made the orange cakes today...YUM!!!!!!
i didnt have enough ground almonds, so i added some LSA...they turned out great....froze some for later...but will make them again and again and again......mmmmmm....now to go and look for that chocolate cake recipe.

It was under Bread and Baked Goods:

Orange Soured Cream Cakes

Makes 12 cakes
ecc 2.25g carbs per cake

5 oz /140g softened butter
6 tbsp Splenda
4 large eggs
Finely grated zest of a large orange
1 tsp orange extract
4 fl oz /142 ml soured cream
6 oz /175g ground almonds
1 tsp baking powder


Preheat the oven to 350°F/180°C/Gas 4, and then lightly butter a 12-hole muffin pan.

Cream the butter and the Splenda. Add the eggs one at a time, beating each one in well, then mix in the orange zest, orange extract, baking powder and soured cream, before beating in the ground almonds.

Divide the mixture between the holes in the muffin pan, and then bake for 20-25 minutes, or until firm to the touch.



Just an idea: I also mixed some of the juice from the orange with some cream cheese and Splenda to make a topping for the cakes

Hi Vydor ~ I have a microplane zester and it's worth its weight in gold. I ordered mine (in a set) from QVC, but they now carry them in places such as Bed, Bath & Beyond.

It's a high quality tool and I love it.

Question

I would like to try this but i do not have a scale,so how much is 6 ounces of almond flour? 4 ounces of soured cream? Do you mean reg. sour cream? How much butter?? Sorry to be a bother, but is just sounds so good.

Hi there...I made these and they really are wonderful!
I cup = 8oz so the flour should be 3/4 cup (although I used a cup)
4oz sour cream = 1/2 cup.
