Default Ideas for mascarpone

I just bought a HUGE thing of mascarpone and I need ideas for how to use it. I like it with just a bit of truvia mixed in, with or without some vanilla. But I cant eat the whole bucket that way. So looking for ideas, sweet or savory. And wondering if it freezes ok.

It's fancy cream cheese - I can't tell the difference in taste, but sure can in price! Just use it any way you would use cream cheese. Google says it can be frozen, but it loses some texture & flavor.

How much did you buy?

a packet of French Onion Soup mix (spices) mixed with softened, room temp Mascarpone would make a delicious dip to have with crudites

cheesecakes also spring to mind mmmmm lol
they often do that - I resist them hehe

I'd probably just eat it straight up from the container, but zucchini lasagna comes to mind, too. It can be a lot of work, but if you make a huge batch, it freezes well in individual containers for a quickly-nuked dinner.

Thanks for the ideas. So far Ive just been eating it w a little splenda. I tried it with berries and I didnt love it as much as berries w a little hwc.
