Default Cake in a Cup

Hi, my 13 year old daughter has embraced the LCHF WOE with me! I couldn't be more thrilled. She went from 140 pounds to 120 pounds and looks wonderful. She says that she feels awesome as well.

She did ask me if I could find some recipes for low carb cake. But seriously, I don't think I could trust myself yet So I thought I would ask if anyone had some low carb cake in a cup recipes that I could make for her. I can't find any that would be considered low carb.

Not a cake, but it has a cake-like texture, is Atkins' "Mock Danish" http://forum.lowcarber.org/showthread.php?t=18094

Instead of lemon or vanilla, you can add cocoa powder or other flavours; but cream cheese triggers my cravings, so I don't make it anymore.

Go to the Contents stickies of The Bread and Baked Goods section, as well as Sweet Treats, then scroll down until you come to Cakes (I think both chocolate and "other"). Then look for things like "bowl muffins" (come to think, they'll be under "Muffins") or Muffin in a Mug, Cake in a Mug, 2 minute microwave cake and so on. I know we have plenty of such recipes there!
