Angry 100 days

It has been 100 days today since dh and I went Primal (Mark Sisson).

Good
-I have lost about 11lbs(without really trying)
-gone is my churning bloated belly and gas(sorry if tmi)
-gone is the aching in my finger joints
-my seasonal allergies are nearly gone too (maybe not connected??)
-I seem to be less moody. For example I can skip a meal most days and be fine.

Bad
-I went to visit my sister and a 5 day planned break turned into over 2 weeks of returning to my old food lifestyle. Also I've had more slips, but some only lasted a meal or two.

-I also replaced my massive sweet habit with way WAY too much fruit for the first 2.5 months and am just now realizing fruit is more of a condiment than a main item.

-crap food is EVERYWHERE and it's what people eat. I am learning to deal with this.

Yes. Grains being the worst offender. I love baked goods and despite the pain in my innards continued on for a couple of weeks.

Then I discovered Baking for Paleo Deviants!!! I made Lauren's granola (YUM!)

I also made a paleo almond/coconut muffin with no sweetener that was really good.

Today I am making panna cotta with coconut milk- think that is your recipe Nancy.

Oh good! Glad you're finding alternatives! My lemon custard is good too. The recipe is on my blog. I like to have it with a few raspberries or blueberries. I also like to make egg crepes and wrap it up in those, for breakfast.

I am just getting started on your blog, lots of good info there.

I'm really interested in sous vide cooking, but not sure I want to invest in a spendy machine.

You could build your own like I did! Rice maker, controller, food saver... plug it in! Could not be easier. I use it just about every day.

I also just added stovetop instructions for the lemon custard, so if you want to make it a more labor intensive way you can.

I just bought a $100 food saver to vacuum seal.

Very big Rice maker: $40
Foodsaver: $100
PID Controller: $139 (about a year ago).

My rice cooker has a hole in the top (with a plug that fits in), that's where I drop the temperature probe in. You do have to ensure you get one that doesn't have sharp edges if you have to put it over the lip instead.

I think Aubrens has a good write-up about what makes a good water bath. Here's that link: http://auberins.com/Sous%20Vide%20a...tion%20note.pdf

I see there's a 38-cup rice maker from Black & Decker. There are some on ebay. I don't know if it's suitable or not. Hard to say without seeing it!

I saw a Hamilton Beech rice maker at BB&B today for almost $50, 20 cup, but it looks as big as the 24 cup black&Decker I have. Only difference is there's a funky aluminum plate attached to the lid, but it comes off.

I bet I'll have to go to a restaurant supply store to see the really big Black & Decker.

Oh, btw... I have my stuff set up on a workbench in the garage. There's no need to keep it in the kitchen, nothing to watch.

I think it's pretty tough to find that 24 cup rice cooker I formerly recommended. However, I'd get this one: http://www.amazon.com/Black-Decker-..._pr_product_top

It's a 38 cup one! Someone on Amazon reviewed it and said it works well with their sous vide setup.

I just noticed there is a little angry face icon next to the thread title.

Did I do that?? Weird!
