Not that these are ideal, but the new 2016 ADA range for pre-meal blood sugar is 80-130, so you will not hear any alarm bells from your doc. They even allow post meal up to 180...that should be an alarm bell but isn't.
Keep on keepin on LC and test various foods and timing. Try eating dinner earlier, no snacking. See if dairy spikes your blood sugar. Again, you only just started and are in an acceptable range. Take your time finding the LC foods that work for you.
