I second this.

I've tried making it a couple of ways, one to blend spices and mayo, then covering with parm, or by mixing the parm in the mayo first. The second is much easier and wastes less cheese, but the first makes a better consistency coating.

I use chili pepper sauce and crushed garlic.

Interesting. The parmey chicken chunks are similar, but use a butter-dip then parm-with-herbs roll before baking and they're great. I wonder if I should try switching the butter to mayo-with-garlic next time just for the variant.

Sounds DELICIOUS.

I cook salmon the same way...but with lemon instead of parmesan.

I know this is from back in May but doesn't the mayo and parmesan melt off in the oven?

You know, I just read that, and that was the first thing I wondered too. Guess we'll have to try it! I could use a little change around here!

It sounds really great and flavorful! I am going to try it tomorrow. I have several packages of chicken in the freezer.

I made the Parmasan Chicken for lunch today. I thought it was alittle strong, but still good. Hubby is the only one who didn't like it. I seasoned it with garlic pouder and italian pizza seasoning. I think I liked the pizza seasoning, little to much garlic. Over all a very good food!! Hubby used to complain that nothing had flavor because I cooked low fat. He deffanitly can't say that now!

I'm cooking it now for dinner tonight. I didn't use the garlic, I really don't like it much but just a little salt, pepper and paprika. Smells good.

I'm sure it will be good even without the garlic. I worry alittle about calories though. All that mayo on top of the chicken, pretty high! Still pretty tasty though! I fixed oopsies today, so I've been eating them with my meals today. There goes them calories! Thankfully its mostly fat. They say its good for the hips you know.

You mean to tell me you have never heard of oopsie rolls? Where have you bee? An oopsie roll is basicly a mock flat bread or roll, mostly made of eggs and cream cheese or mayo. I found the recipe by going to Search, and typing in oopsie roll. Scrolled down alittle ways and found it. Couldn't find it in the recipe section. Read the whole thread before making them. That will help you keep from making commen mistakes.

By the way, how did that chicken go?

I keep peaking into your journal(short memmory ) You must not post in there very often. I live for my journal. Don't know why . . .
