Default Duh, shake and bake type chicken...

After LC for so long why haven't I done this before?

I like chicken thighs for this.

Dip thighs in a beaten egg then into a mix of:

1/2 c parmesan cheese
1/4 almond flour
here I put in italian seasoning or cajun seasoning or lemon pepper or tarragon and lime leaf, any flavour you like!

Put into pan and add into pan dollops of butter and lemon juice.

Bake at 425 for 40 minutes.
Excellent with turnip fries!
I especially like the chewy bits from the bottom of the pan.

Default baked fried chicken

I once made a baked fried chicken that was outstanding (while hot - it didn't quite translate cold) by coating the chicken with mayonaisse & then rolling in rice krispies but I bet crushed pork rinds would be an awesome low carb version.

I recently made fried chicken by coating the chicken with low carb biscuit mix and it was good cold. I had been just frying the chicken naked but it stuck to the skillet really bad.

Hello!
Today I used the remains of a roast chicken to make nuggets- just stripped the chicken of all meat and roughly chopped it up. In a bowl i mixed 1 egg, a little bit of garlic pepper and some cajun seasoning, then added the chicken and stirred until all was coated. I then fried off the mixture a desertspoon at a time in oil. They ended up having a great colour and the texture was like having take away nuggets!
