Hi Pete. I had a breadmaker ages ago, mainly for my non-LC ex. All of the LC recipes I tried were "just okay", if not outright disappointing. At the time, I was not gluten-intolerant (or didn't think I was) and recipes called for CarbQuick and/or extra gluten flour.

I got rid of it and wouldn't want another one. The bread replacements I prefer now, like Demi said, don't require kneading. I love my sandwiches, too, and make either these coconut flour biscuits or these chaffles almost every Sunday to bring to work during the week.

I'm sorry to leave a response that doesn't answer your question; I just wanted to mention my experience. Maybe someone with better bread baking experience can chime in...
