Breakfast Burrito
Eggs
Bacon
Green Pepper
Onion
Cheddar cheese
Taco seasoning -to taste
Low Carb tortillas
Salsa/taco sauce/sour cream
Saute bacon in large pan, meanwhile chop onion and green pepper (1/2 of each should be fine) Remove bacon just under desired doneness, set aside on paper towel. Drain off most of bacon grease from pan, but keep some in there to cook with. Add onions and peppers and cook until onions are translucent. Chop and add bacon. Crack about 6 (all I had) eggs into a bowl and beat until mixed. Pour eggs into pan and stir constantly. (I had about 4 hard boiled eggs in the fridge, so I chopped them and added to the mix) Season with taco seasoning as the eggs are cooking. You want a 'scrambled egg' texture, but not over cooked. Stir in some shredded cheese and cover on low heat. Fold mixture over a few times to blend cheese.
Remove from heat and allow cheese to bind everything together.
Portion mixture into tortillas and roll'em up. Secure with a toothpick if needed.
Serve with whatever condiment you'd like. Salsa, sour cream, taco sauce...whatever your stomach can handle in the morning. I used taco sauce.
