Creamy Curry Chicken

Adapted from The Schwarzbein Principle Cookbook

1 Servings

This one looks too high in carbs, but this program calculates carbs that don't "count" according to Diane Schwarzbein.

1 tablespoon olive oil
1 skinless boneless chicken breast half, cut in cubes
1 tablespoon unsalted butter
1 onion, cut in 1-inch pieces
1/2 red bell pepper, cut in 1-inch pieces
1 tablespoon garlic, minced
1 tablespoon minced ginger
1 tablespoon curry powder
1/2 teaspoon paprika
1/4 cup chicken stock
1/4 cup sour cream
1 tablespoon chopped fresh cilantro

Saute the chicken in the olive oil until it is no longer pink. Remove from the pan. Wipe the pan out with a paper towel. In the same pan, heat the butter until it is bubbly. Add the onion to the pan and saute until it is translucent. Add the bell pepper, garlic, and ginger. Saute for a couple minutes more.

Add the chicken and remaining ingredients except for the cilantro, cover and simmer for 10 to 15 minutes. Serve sprinkled with the cilantro.
