Default Crockpot Lemon Chicken with Rosemary and Red Onion

6 boneless, skinless chicken breasts
2 lemons - juice of one, slice the other
3 tsp. dried rosemary
1/2 medium red onion, sliced
salt and fresh ground pepper to taste

Add chicken to the bottom of the crockpot. Add juice of one lemon and pour in enough water to just barely cover. Add lemon slices directly on the chicken. Add rosemary, red onion, salt and pepper. Turn on high and let cook until chicken is done.

I haven't got a clue how this is going to taste. But I have one lemon and a bunch of "TrueLemon(tm)", an onion, and some chicken breasts. I'm going to go try it! I'll let you know. Thanks!

I tried this. I used 5 qts of water, 6 packages of TrueLemon(tm), 1 tsp rosemary, some sea salt and cracked black pepper, mixed it up in the crockpot. Then I added the equiv of 6 boneless skinless chicken breasts, fresh lemon slices on it, a coursely chopped onion sprinkled over it, 2 more teaspoons of rosemary, some more sea salt and cracked black pepper, and turned it on high for about 5.5 hours.

It came out good. It was more like just another way to crockpot chicken, for me, than something like a whole meal-in-pot. The chicken tasted fine, kinda neat with the lemon tang.

We put thin sliced dill havarti cheese on top, some super finely sliced fresh hot peppers, nuked it briefly to melt the cheese, and added a couple spoons of sour cream. It wasn't gourmet but it was yummily edible, me and the 11 year old scarfed half of it down and put the rest in the fridge.

that sounds like a lot of liquid for crockpotting - did it come out like boiled chicken?

Yes, it was too much water. I should have used about 4 qts and it would have come just to the top of the chicken. So I lost the well done top of the chicken breasts I would have had otherwise. Still was nicely edible though.

This sounds like a good recipe. Usually when I make chicken in the crockpot I use bone-in chicken and no water at all and it makes it's own broth.

I added only 50 ml. of water and it turned out juicy and not watery. I also used 1 big onion.
It would be even better with bone-in chicken as No-bread said.

This sounds awesome, two questions:
1. If I use fresh rosemary how much would I use?
2. about how many lbs of chicken did you use?
