Light and simple dinner tonight: salami rounds layered with cream cheese and pickles. Disclaimer to anyone in induction: I am on an extended induction and no, cream cheese is not technically allowed, but after the first two weeks it is the one and only thing not on the acceptable foods list that I allow myself to have. With it's low carb and high fat content I never understood why it should'nt be allowed in moderation anyway!
It was really good.. I discovered I could eat anchovies but I got the fillets that are wrapped around a caper, not the ones that are whole (heads on....)
I prepped the salad and just the separate little containers alone took up a whole shelf in the fridge...
Last night was just a mish mash salad of what was in the fridge - iceberg, cherry tomatoes, cheese crisps, bacon bits, mozzerella, celery, and half a can of salmon with homemade Ranch.

I missed this place- I was just off on some adventure. I was hiking in the Appalachians, traveling a ton, then rolled into the world championship for those crazy mountain/ obstacle races I do..... and I did it!!!!!!! I came in fourth from last, but omg, I did it!
Oh, and I moved into a new place during all that.
I made meat loaf tonight for me and hubby - one of the few things we both like - and it was delicious! Two and a quarter lb of chopped beef, lots of chopped Vidalia onion, onion powder, garlic powder, sea salt, black pepper, paprika, organic ketchup, one beaten egg, four tbsp of panko bread crumbs for binding. Small on the carbs, big on the yum.
