Light and simple dinner tonight: salami rounds layered with cream cheese and pickles. Disclaimer to anyone in induction: I am on an extended induction and no, cream cheese is not technically allowed, but after the first two weeks it is the one and only thing not on the acceptable foods list that I allow myself to have. With it's low carb and high fat content I never understood why it should'nt be allowed in moderation anyway!

This was such a sweet message to pop up, just as I finally came back.
I missed this place- I was just off on some adventure. I was hiking in the Appalachians, traveling a ton, then rolled into the world championship for those crazy mountain/ obstacle races I do..... and I did it!!!!!!! I came in fourth from last, but omg, I did it!
Oh, and I moved into a new place during all that.

Happy to be home here.
And will be posting again.

I made meat loaf tonight for me and hubby - one of the few things we both like - and it was delicious! Two and a quarter lb of chopped beef, lots of chopped Vidalia onion, onion powder, garlic powder, sea salt, black pepper, paprika, organic ketchup, one beaten egg, four tbsp of panko bread crumbs for binding. Small on the carbs, big on the yum.

Barb, your meatloaf sounds good - thanks for sharing the recipe!
