Default Cheese Cake Recipe

I don't know if this particular recipe has ever been posted on this site, but it was truly SO GOOD that it is worth a repeat! This is one that I would eat even if I wasn't LCing. Many of the LC cheese cakes have such an after-taste that I can't hack it - even my dog wouldn't eat a couple of them! I ran across this recipe and simply subsituted Splenda for the sugar, and it tastes great! You can leave out the Vanilla Wafers and have a next to nothing LC treat!



Put 20 Vanilla Wafers in the bottom of 20 paper cupcake holders

Cream together:
2 - 8 oz Cream Cheese packages
1 1/4 cup Splenda
1 cup sour cream

Add
3 eggs
1 tsp vanilla extract

Fill cupcake holders 3/4 full with this batter.
Bake ~ 325 for 20-25 minutes

Fitday added up 20 grams carbs FOR THE WHOLE BATCH of the batter! Then add 2.5 for each Vanilla Wafer. One cupcake cheesecake has 3.5 grams! I diced some strawberries with a bit of splenda over them and let them sit in the fridge until they formed some juice and used about a tablespoon per cupcake, which adds about 1 more carb.

If you are a chocolate hound, 1/2 cup of cocoa can be added, but I haven't tried this yet. That would make the batch's total carb count 42 according to fit day.

I just ran the recipe for the basic filling, exclusing the wafers, through MasterCook.. and I come up with 54 gms of carb, 0 fiber. The bulk of that is from the Splenda (30 carbs)... which I entered myself at .5 carb per teaspoon as it says on the box. Are you using another kind?

Same result in Fitday - so even deducting the Splenda completely, it's still 24 carbs total.
