Lemon Herbed Swai (Induction friendly!)
1 fillet swai (I buy the big bags at Target, they're individually packaged inside)
1/2 tbsp. olive oil
1 tbsp. lemon juice
1/4 tsp. each of: Kosher salt
Lemon pepper
Garlic powder
Basil
Thyme
Heat 1/2 tbsp. olive oil in a pan over medium heat.
Lay fish in pan; sprinkle with 1/2 tbsp. lemon juice, 1/8 tsp. garlic powder, 1/8 tsp. kosher salt, and 1/8 tsp. garlic powder. Cook until edges turn white.
Turn fish over and sprinkle with 1/2 tbsp. lemon juice, 1/8 tsp. garlic powder, 1/8 tsp. kosher salt, 1/8 tsp. garlic powder, 1/4 tsp. basil, and 1/4 tsp. thyme. Cook until edges turn white.
Turn fish over and cook for 10-15 seconds to slightly blacken spices.
Makes 1 serving.
