Default Cold cucumber soup

My dad taught me to make this when I was little, I think it's greek.
serves 4

4-5 cucumbers
1 clove garlic
1 tbs fresh dill (if you cannot get fresh use 1 tsp dried and not dill seed, dill weed)
1/2-3/4 cup creme fresh or sour cream
a good handful of fresh Italian flat leaf parsley
salt and pepper to taste
juice of 1 large lemon
zest of 1/2 lemon

Peel and seed cucumbers, put everything except creme fresh in food processor and blend until very smooth, correct seasonings, add creme fresh and blend again. You may add a little water if you want thinner soup. Serve very cold with an extra dollop of creme fresh.

I have made this soup but with Greek yogurt and garnished with the creme fraish. It is really good. I love cold soups.

What a great looking recipe! I love cucumber soup, but haven't made it in absolute ages. We're supposed to have a bit of warmer weather this coming week, so maybe I'll give your recipe a try.
