Well, tonite was my last meal till my weigh-in Sunday morning so we had a feast and I totally pigged out

I had home-made ramen noodle soup using shirataki & oat fiber angel hair noodles, two shrimp kabobs loaded with shrimp, pearl onions and a rainbow of bell pepper chunks. I had some left over beef tenderloin trimmings from a couple nights ago and made a third kabob for myself using mushrooms and fresh from our own garden cherry tomatoes. Lasty, dinner included 4oz butterfly lobster tail. What a feast!

I put some life into my boring lazy it-was-about-to-expire, stew-beef-cooked-in-canned-tomatoes-in-the-pressure-cooker leftovers. I went for Mexican flavour - I sauteed some onion, cumin and chili powder in olive oil, then simmered most of the liquid out of the beef and tomatoes. Served it over cauli rice. It turned out really well, even DH finished it.

Not positive you meant the shrimp soup, but here is what I went with, just in case. It was delicious and super easy! I was trying to come up with some ways to have very low key dinners/ minimal prep.

1 cup salsa
4/3 frozen roasted veggies
2c chicken broth
Chili powder (a few shakes?)

Started heating over medium, threw in pound raw shrimp and heated until shrimp were cooked through.

Topped with sliced avo, sour cream and cheese crunchies (like the ones in produce section that are 100% just cheddar cooked into crouton form).

This made enough for 3 people, or 2 super hungry ones
It made one very large bowl for both of us, plus maybe half a cup for seconds.
