Post TUNA QUICHE

Level One
Pro/Fat
Serves 4

1/2 cup mayo
1 1/2 cups grated cheddar cheese
1/4 cup chopped onion, optional
1/2 cup heavy/whipping cream
2 eggs, slightly beaten
2 - 6 oz. cans tuna, drained

Mix together all ingredients and pour into glass pie dish. Bake at 350 for 45 minutes or until set.

Post CREAMY SHRIMP AND VEGGIES

Level One
Pro/Fat
4 servings

1 pound frozen** large shrimp or prawns
2 cups chopped cauliflower
1 large red bell pepper
1 cup sugar snap peas
½ cup chopped green onion
1 cup heavy whipping cream
½ cup white cooking wine
1 tbsp dried basil
1 tsp garlic salt
1 tsp onion powder
½ cup shredded Parmesan cheese
1/8 tsp guar gum


Soak frozen shimp in hot water to thaw. Keep warm.
Chop all veggies and place in microwaveable casserole

In a small pot heat cream, wine and spices to boiling. Boil and stir one minute.
Add cheese and stir until completely melted (mixture should be smooth)
Add guar gum and continue stirring until sauce thickens

Pour sauce over veggies
Cover and microwave on high for 2 minutes
Stir in shrimp and serve!

This can be served on its own in a bowl or on a plate over arugala or spinach leaves.

**For fresh shrimp, shell, devein and rinse shrimp. Prepare sauce in a wok or other deep frying pan, then sauté shrimp in sauce for a minute or so on each side. Remove shrimp with slotted spoon and keep warm. Continue with the recipe and add shrimp in at the end as described above.

Post YUMMY TUNA SALAD

Level One
Pro/Fat
4 servings

2, 12oz can Albacore Tuna packed in water
1/2 cup shelled sweet peas (can add in chopped shells too)
1/2 cup chopped celery
1/2 cup cherry tomatoes (quartered)
1/2 cup chopped red bell pepper
1/4 cup chopped green onion
1 tsp lemon juice
1 tsp French Mustard
4 tbsp mayo
1/4 tsp garlic salt
1/2 tsp onion powder

Mix all ingredients together
Serve over a bed of mixed lettuce.

Level Two - add chopped walnuts and black olives!

Post CUMIN CHICKEN SALAD

Level One
Pro/Fat
2 Servings

2, 12oz can chicken packed in water
½ cup shelled sweet peas (or just chopped)
½ cup red bell pepper
½ cup chopped cucumber
½ cup diced cherry tomatoes (or any very sweet tomato)
1 tsp lemon juice
1 tsp dijon mustard
4 tbsp mayo
1 ½ tsp ground cumin
1 tsp black pepper

Mix all ingredients until chicken looks ‘shredded’ and serve on a bed of mixed lettuce. I

For hot chicken salad bake in a 350°F oven for 20 minutes. Try topping with Swiss or Monterey Jack cheese!

Level Two Variations:
Add almonds or macadamia nuts to cold salad
Add cheese, bake as above and stuff into whole grain pitas!

Thumbs up CREAM CHEESE PANCAKES

Suzanne's famous pancakes are already listed in the kitchen area here on the site, so <a href="http://forum.lowcarber.org/showthread.php?s=&threadid=88704click[/url] here to see them!">click here</a> to see them!

TIP! Use unsalted butter for the syrup and also for the pancakes (though it's not as big a deal) if you make this sweet version. You can leave the sugar and cinnamon out and put in chopped green onions, crumbled bacon or sausage, diced peppers etc and savory seasonings if you want a new slant on these. They are fantastic cold or reheated as a snack later on in the day and work great as sandwich "bread" especially for breakfast type sandwiches with eggs, cheese or meat.

I like to have the sweet ones with a sprinkling of cinnamon/Splenda, made just like cinnamon sugar. Hubby prefers them with SF maple syrup.

Thumbs up ONE PAN CHICKEN ALFREDO

Level One
Pro/Fat & Veggie
Serves 4

4 boneless skinless chicken breasts
2 tbsp. olive oil
2 tbsp. butter
2 cloves crushed garlic
salt & pepper
1 to 2 cups of chopped steamed broccoli
1/2 cup mushrooms (optional)
1 1/4 cups heavy cream/whipping cream
1/2 cup parmesan cheese
1/4 cup asiago cheese
1/2 tsp. ground nutmeg

Cut chicken into small cubes. Heat oil, butter and garlic in large sautee pan over medium high heat. Add mushrooms and simmer until soft. Add chicken and salt & pepper to pan and cook until done. Remove chicken from pan.
Let juices in pan reduce a little and add cream. Bring to a slight boil and simmer for about 2 minutes to thicken. Stir a few times to prevent scorching. Add cheeses and mix and continue to simmer. Add nutmeg, broccoli and mix and allow to cook on low for about 2 minutes. Stir in chicken and simmer a few more minutes. Serve over sauteed zucchini nooldes or eat out of a bowl! Sprinkle more parmesan on top!

Default shrimp recipe

pro fats veggies
level one
serves 4

citrus marinated barbecued shrimp with fresh arugula
20 large shrimp (peeled and deveined)
7 garlic cloves(pressed)
1 bunch cliantro(chopped)
1/2 cup olive oil
3 serrano chilies(chopped)
zest from 1 lime

combine all ingredients in a noncorrosive bowl marinate the shrimp for 30 minutes prepare the grill cook the shrimp on the hot grill basting with marinade until cooked through do not overcook or will get tough keep warm

arugula
1 pound arugula (rinsed and dried)
2 teaspoons olive oil
juice from 1 lemon
salt and pepper
toss arugula olive oil lemon and salt and pepper put shrimp on top of arugula

Default somersize cheeseburger pie recipie

pro fats veggies level one

cheeseburger pie

buuter for greasing baking dish
1 pound ground beef or turkey
1 small onion chopped
1 cup heavy cream
3 eggs beaten
4 cups shredded chedder cheese
salt and pepper

preheat oven to 350 butter a 13 by 9 baking dish set aside. brown ground beef in large skillet over med heat add onions and cook for an additional 3 minutes strirring constantly remove pan from heat add cream and eggs and 3 cups of the cheese stir well season with salt and pepper pour mixture into prepared baking dish prinkle with remaining cheesebake for 15 to 20 minutes till cheese begins to brown

Default mini pepperroni pizza

pro/fats and veggies
level one

for the crust
1 8 ounce package cream cheese at room temperture
2 eggs
salt and freshly ground pepper
1/4 cup grated parmesan cheese

for the pizza
1/3 cup marinara sauce
pinch of cayenne pepper
1/2 teaspoon oregeno
1/2 cup shredded mozzarella cheese
6 ounces pepperoni sauteed

preheat oven to 350 butter a 9 by 13 inch baking dish. set aside.In a medium bowl blend together cream cheese and eggs with a wooden spoon season with
salt and pepper. add parmesan cheese and stir till combined pour into prepared baking dish bake for 17 minutes or until golden brown let cream cheese crust cool 10 minutes meanwhile mix together marinara sauce cayenne pepper and oregeno set side raise heat to 400 degrees using a 4 inch round cookie cutter and leaving the cream cheese crust in the baking dish cut 6 rounds out of the crust discard the extra pieces of crust leaving the 6 rounds in place top each crust with marinara ,cheese and pepperoni bake for eicht minutes till cheese is bubbly.
