Question turkish delight

Help! Anyone (Karen?) got a recipe for turkish delight? (The one done with rosewater essence) How to get that particular texture? Agar? Gelatine?

Good question!

Turkish Delight is made with sugar syrup, cornstarch (cornflour) and somethimes gelatin. Xanthan gum would probably approximate the syrup and cornstarch and gelatin would firm it up. But sugar is important for that kind of texture so it would require a bit of fiddling.

This recipe looks like a good home base to start with

You might want to mix in roasted pistachio or hazelnuts.
