I am soooo addicted to Carb Quick. I have made every recipe on the website and am now looking for some more. If you have any, please post them!

Thanks!

(oh and btw, the chocolate chip cookie recipe on the website needs some tweaking. The cookies were a bit salty..)

Becki (4beans4me) has come up with quite a few:
Pumpkin Cranberry Scones
DaVinci Custard Pie
Spinach and Feta Bake
Chocolate Chunk Scones
Pumpkin Cranberry Scones

And here are a few more:

2-Minute Brownie
Sour Cream Muffins/Biscuits
Individual Blueberry Cobbler
Pie Crust
White Chocolate Macademia Cookies

...and here's a recipe for Faux Carbquick. Use at your own risk - as far as I know, the real Carbquick uses some kind of enzyme-modified flour, like Dreamfield's pasta.

Default Blueberry Scones

Blueberry Scones

1 cup carbquik
1 teaspoon baking powder
4 packets splenda (or more if you like them sweeter)
2 tablespoons cold butter cut up into small chunks
1 tablespoon grated lemon zest/peel
1/2 cup dried blueberries
1 large egg, beaten

Preaheat oven to 400 degrees. Combine carbquik, baking powder and splenda. Cut in butter until is crumbly. Add lemon zest and blueberries and mix together. Add egg and stir lightly with a fork just until all is combined. If mixture is too dry, add a tablespoon or so of cream or water. Drop into 4 equal portions onto baking pan. Do not flatten. Sprinkle with a little more splenda if you want and bake for 20 minutes. Check halfway through and lower heat if they are browning too quickly.

Makes 4 servings, recipe doubles easily
Per serving:
155 calories/ 12g fat/ 13g fiber/ 4 net carbs (17)

Question Carbquick swedish pancakes?

I just bought Carbquick today and am wondering if anyone has made large thin crepe like pancakes with it. My family would be overjoyed as they are a Danish tradition.

I heard that Carbquick act exactly like Bisquick. I went on the Bisquick site and printed all their recipes. I also did a web search for bisquick recipes. I have a binder full of things to try. So far, I tried a couple and they came out great. Just substitute the high carb stuff, like sugar, by their LC counterparts.

Talking Low Carb Pancakes with Carbquick

I have quite a few recipes for Carbquick. And, yes it will work much like Bisquick. Remember when you measure Carbquick to stir up with a fork first and then put into measuring cup with a large tablespoon. DO NOT PACK DOWN! I belong to another group that the Chef who creates the Carbquick recipes belongs to. He has give a lot of great recipes and tips.

Here is a pancake recipe:

Carbquik Puff Pancakes (lgpars)

2 eggs
1 cup Carb Countdown 2%
2 1/3 cups Carbquik
2 tablespoons Splenda bulk
1/4 cup vegetable oil

Beat eggs with electric beater until thick and creamy.
(This takes a few minutes, but it is important.)
Blend in milk; add Carbquik and Splenda. Mix just until thoroughly dampened.
Fold in oil.
Spoon onto medium-hot ungreased griddle.
When puffed up, and bubbles begin to break, flip over and bake on other side.
Makes about 15-20 small pancakes.
(I made half the recipe and got 12, between 3 and 4" in diameter.)
Per Serving (based on 8 servings): 195 Calories; 15g Fat (53.8% calories from fat);
10g Protein; 18g Carbohydrate; 14g Dietary Fiber; 50mg Cholesterol; 284mg Sodium

------------------------------------------------------------------

You can experiment and come up with variations on your own that are pretty good. If you recall the Impossible Pies from Bisquick, go to the Bisquick web site and pick up some recipes there and make them low carb. Sub milk with Hood's Carb Countdown, sugar for AS, you know how to do it.

I don't exactly make my pancakes the way this recipe says and I honestly prefer the waffles made with carbquick. Just my preference cuz hubby prefers the pancakes. I use 2 eggs, 1/4 cup oil, tsp vanilla, tsp almond extract, a few drops of FiberFit and 1 cup milk. Then I begin adding the Carbquick a few hefty tablespoons at a time until I get it the consistancy that I prefer. Spray pan with PAM or whatever and make like usual. Serve with butter and LC syrup or jellies.

Enjoy and let me know if you want more recipes.

If you are looking for crepes I would just add enough Carbquick to milk, vanilla, oil, eggs, etc... for the consistancy that you need for crepes. It shouldn't be too difficult, but then what do I know?

Default Strawberry Season !!

I just made the old Bisquik recipe for strawberry shortcakes. I haven't tasted them yet but they look YUMMYFUL !!

2 1/3 C. Carbquik
1/2 C.Carb Countdown Milk
4 Tablespoons of Splenda ( I used drops)
3 Tablespoons of butter, melted

Mix all together in a bowl. Lightly press into an 8" square pan. Bake at 450 for 10-15 minutes. Top with smashed strawberries and REAL whipped cream.
ENJOY !!
