chilled stuffed cucumbers
This truly is a no brainer...more of a tip than a recipe!
make your choice of cold chicken or tuna salad-usually mixed with sugar free mayo, a dash of garlic powder, salt and whatever else you like
peel a chilled medium size cucumber and cut in half lengthwise, then with a small spoon, scoop out the seeds from the length of the cucumber.
you should end up with cucumber "canoes." Then you fill the hollow with your salad and YUM!! crunchy and cold and fresh!!
**note: fitday states that meduim sized cucumbers have 4 carbs per the whole thing. Now, since we've peeled and removed the inner seeds and membranes, does this lower the carb count??
