Even the professional Tanita models (BC-418) will drive you nuts, though that one breaks out the water weight, which is making your BMI bounce around.
Go on the Tanita website and download the manuals for your model, and other info they had there, on what can/cannot impact the result. Then I found more info through a google search, but in the end was happier with a very experienced trainer using the skin fold test.
So since I no longer go to Dr. Westman's office for the fancy Tanita reading, I use a cheapie scale at home that only measures to the half pound. Plot the result monthly on graph paper with pencil and watch the trend. Fluxuations up/down by 4 pounds are the "grey area" of water weight described by Phinney and Volek. Their Clinical Pearl is:
