Question Karen- Question re: recipe

Hi Karen,

Do you have a good LC chocolate pudding recipe? If I use the box of Jello Pudding (even if I use watered down heavy cream instead of milk) it would be too high in carbs IMO.

I made a batch about a month ago using a recipe I found on another LC website and it was awful. It's not that it tasted bad, but the texture was bizarre. It called for some gelatin and that made the finished product like chocolate jello, not pudding. It was too strange and kind of "chewy" for lack of a better word.

I also made a batch from another recipe that called for Silken Tofu, and the Tofu gave it a slightly, odd bitter taste.

Do you have any suggestions?

Believe it or not, silken tofu makes an excellent base for puddings. Whizz it all up in the food processor, add melted chocolate, melted butter, a little cream and artificial sweetener.

I've also made a butterscotch pudding using almond butter, browned butter and caramel extract.
