As far as upping the fat, Susan I are eating keto, it is high fat, moderate protein and low carb veggies. It take time to transition form burning carbs for "fuel" to burning "fat for fuel". It is worth looking into if you are interested. On youtube there are lots of videos, each plan can be a bit different. I like Dr Eric B.'s vidoes, he advocates more veggies than many plans, moving toward two meals a day and thinks BPC is a "fasting breaker" although it works really well for Susan and I.
The coffee, there are choices to what you add to it for your fat. I use coconut oil 1 tbs and 1 tbs of coffee cream or whipping cream. Susan's recipe is different than mine. My advice is to start with a tsp of oil and work up to a tbs, my other advice is to use a blender or a good hand mixer to froth it up and incorporate it into the coffee, otherwise it is like oil and water, only oil and coffee.LOL
My meals consist of 3-4 ounces of protein a good portion of lc veggies and 2 tbs of fat added ( butter, olive oil, mayo) I do used a thin cheese slice or a tbs of cream cheese as additions too.
