Default What's for dinner???

I think we often get stuck in a rut when it comes to meal ideas. I would love to see what others are eating for dinner on a daily basis. Even if you typically eat the same thing, your "normal" may be a new idea for someone else. Please share!

Tonight, I am having the quickest and easiest. Microwave wanna be pizza!

1 Tbsp. of Low carb pasta sauce spread on a saucer
1 handful of shredded mozzarella
5 slices of pepperoni

Microwaved for 1 minute. Done!

Tonight I had a reuben sandwich sans bread. Instead of 1000 island dressing, I used a horseradish dip I made with mayo & HWC.

was out of town last 2 nights, so ate out:

night one:
whole lobster!
a few steamed clams
side salad with blue cheese

night two:
salad with shrimp and blue cheese dressing
a couple wings
kiddie size sf/ ff frozen yogurt (pina colada)

YUM!!!

I made another huge batch of LC vegetable beef soup yesterday with the help of my 16 year old daughter. She loves this soup - but it is a lot of work -- so she gave me a hand with all the chopping. Had a cup for my dinner tonight. Good stuff!

"Potato" hot dish casserole. Instead of potato's I will be using either celery root or daikon radishes. Instead of cream of mushroom soup I will be using Alfredo Sauce

My oldest daughter is cooking dinner tonight. She's planning to make LC meatballs, mixed veggies, & a salad. I'll probably substitute the salad for a serving of LC coleslaw that I made yesterday. The slaw is always better after a day in the fridge.

Tonight, dinner turned out awesome! I was attempting to recreate something similar to my favorite Italian restaurant meal without the pasta. I think I pulled it off.

I am calling it Chicken Rosso Pesto

2 large chicken breasts pounded flat. Sauteed in olive oil and seasoned with garlic powder, salt, pepper, onion powder, and plenty of basil.

Remove chicken from pan.

Add to pan one diced red bell pepper, one can mushrooms (I didn't have fresh), and one small diced onion.

Once vegetables start to soften, add in 4 Tablespoons Rosso Pesto (this is WONDERFUL, and I found it at Aldi's), 3/4 cup heavy whipping cream, and 1/2 cup grated parmesean. Shake in some dried red pepper flakes to your liking.

Dice chicken and return to pan. Ta-da!

Very similar to the original flavor of my favorite. I always wondered how they made this with such amazing flavor. After discovering the Rosso Pesto sauce, I can do it too!

How do you do your meatballs? Need some new ideas!!
