i almost never eat breakfast, but woke up hungry.

Salad - spinach with a can of tuna mixed with a buttermilk asiago dressing and topped with 1/2 med. tomato and some grated old cheddar cheese. This is also my lunch. Oh, and 2 cups of Belgium chocolate flavored coffee with coconut milk and a few drops of liquid Splenda. I keep telling my daughter it's like a chocolate bar in a mug and she thinks it's not fair since she's too young to drink it.

I bought some Atkins pancake mix and I'm still trying to get a handle on it. Today's batch was...not terrible. They were even edible! Black in many places, but...edible. I can't taste the cinnamon I tried to add to them. I'm thinking of buying a waffle maker. I had them with butter, sugarfree syrup, and sausage. I also added a strawberry and a few blueberries on the side to add some color.

Salad. 2-3 cups fresh greens with homemade vinagrette and 2 eggs over medium on top. Sometimes ham too. Love it!

mascarpone stirred up with cinnamon and erythritol, topped with 1 oz nuts (mostly pecans, some walnuts, a few pumpkin seeds, bunch of shredded unsweetened coconut, and 1 peanut)
