Default welcome

hi guys, it's nice to have you here, and back- DD. well, for me things are ok. i have been working so much that i haven't made it to the gym. but on a good note, i might loose more weight if i don't build much muscle!
well, for snacks and things i was eating a lot of slim jims. i don't know if they are that healthy for you, but i sure liked them. and a ton of string cheese. i was addicted. but being broke has an affect on you. i haven't been a ble to buy either, so all i have been eating lately is straight meat. that's all i really have in my fridge. hopefully until tomorrow. oh, some people like this dip, others don't. 4oz cream cheese,1 can potted meat, splash of tabasco, and a splash of ketchup. i love to stuff celery with it. my grandma used to make it, and when i started LC it poped into my mind. i love it. hhmmmmm.....i also made some PB cookies. i found this recipe on here, i think. 1c PB, i cup splenda,1 egg, 1 tsp vanilla. mix and make into 24 cookies. i think that i came out with 2.5 grams per cookie. if you make them, double check. they were brittle and a little dry, but otherwise good.
oh and i also took some sliced salami and put a piece of muenster cheese in it and heated them up to where the cheese was melted. it was very good. you can dip in mustard.
let me just say that i have read almost every snack idea on this web site. i am always looking at recipes to see what looks good. and i still haven't found a good cheese cake recipe.
well good luck to you both. i hope that the pounds fall off!!

Lightbulb Cheesecake!

Hi Rachel!
I have two recipes for cheesecake-type desserts in "Lauri's Low-Carb Cookbook" which I bought last week. One is for a cheesecake and the other is for what she calls "Pumpkin Pie" but is really a cream cheese/pumpkin concoction. I will make the pumpkin one for my Thanksgiving (Canadian) which is Oct. 14, will let you know how it turns out. Re: snacks. One of my downfalls has always been snacking with the kids when they come home from school. I have a new habit that I look forward to now - I make a big cup of Stash brand "Vanilla Nut Creme" herbal tea, and put 2 Tbsp. heavy cream in, tastes like dessert to me!! I then sit down for 15 minutes and read the mail or the paper, or just look out the window. After, I feel like I have had a break and am refreshed. I do need strength today - my oldest daughter is at college 3000 miles away (her first year) and I need to bake cookies to send her. I can do this and not cheat!!!!!

Have a great day!!!
Kathryn

Default downfall

cookies!!! i miss baking! that's what i love to do. my favorite thing to bake is bread. but i haven't done that in a while. in may i got a kitchen aid mixer for my anniversary, and i love it. but i miss being able to use it as often as i'd like. i plan on making some cookies for other people. but only when cheating is less tempting.
please let me know how the cheese cake turns out. every one that i have tried hasn't been like the real thing. especially the one's with the 'topping'. sour cream- yukky!
i actually had thanksgiving in canada one year! we went to visit friends of the family in windsor, ontario. it was neat. 2 in one year! i plan on cheating a little bit around then. i have to have mashed potatoes! i will have too!
well, good luck! i hope you keep loosing! i haven't weighed myself this week yet. i think i might wait. maybe it will make my brain think that i am loosing more than i really am! thanks

Talking Recipes

I'm so proud of myself, I baked reverse choc chip cookies (brownie cookie with white choc chips) and did not have ANY!! I was not actually tempted to. Unreal. Anyway, I mailed some to my daughter (she is in Ontario) and the rest are in the cookie jar for the rest of my family. I found some great recipes at

lowcarbluxury.com

go there and you will find oodles of cheesecake recipes, some of them actually sound fabulous!!! I'm down only one more pound and won't weigh myself for awhile yet. Next week I am going to join a ladies only gym that opened here recently, I am really looking forward to that.

I hope that it is not to late to jump in here...

I am restarting induction for the LAST time... I really need to get at least 20 lbs off... my goals is to get to 150 lbs... I started atkins a few years ago and lost 40 lbs.. my highest weight was around 220.... Im happy to say that I have not gained it all back but Im so close to hitting that 200 mark again. I promised myself that I would never get back out of the 100's again....

so as I sit her and type I hope that this will be the time that I can do it....... I need the support more than ever, and hope to give it back in return..

Take care

Talking welcome

welcome! i know i speak for everyone when i say that we all have struggles. will power is hard to come by, but once you get it, you'll be ok. i never thought that i would honestly be able to stick with LCing for as long as i have. normally i give up after a short time. but now it is a true, way of life.
congratulations on losing the 40 before. hopefully you'll be able to do it again. i haven been slacking lately and haven't been to the gym, but i am still losing, thank god. i weighed in at the doc's today and lost another 6 in the past 2 weeks, or so.
joining a group is nice too. it keeps you going. also i recommed starting a journal. i didn't for the first few weeks, and i wish i had. the people that reply to me have been such a wonderful support. not just for LCing, but in every aspect. just don't give up, and it will pay off.

i am back, and i finally weighed in!!! i went to the doctors and got weighed. i am down.... 17lbs!! i haven't been to the gym in weeks and i am still losing, thank god! i have been really good about sticking with my allowed carbs for the day. of course some days i go over, but it's ok. i am almost at 2 months and i am still around 20 a day. i am so happy doing this. i tell everyone! guess how much i've lost? they are shocked.
my loss isn't drastic, but when my husband got home from his month long tour in california, he totally noticed. he thought i looked great. (but he has to say that) i just am very excited!
where have you guys been? check in, ok?
