Default Leftover Pot Roast

I've been eating Pot Roast since Sunday and as wonderful as it was the first few times I ate it, I'm getting a little tired of it now. The only problem is I still have about a pound of it left and I don't want to freeze it. I've just been eating it with the gravy (pan drippings) and some veggies, but I've run out of gravy (which is fine with me). Does anybody have any good ideas for something else I can do with it so it doesn't seem like I'm eating Pot Roast AGAIN!!!

Slice some peppers (Green. Red, Yellow, whatever) and some mushrooms, and make up a stir-fry with some butter or oil and seasonings. When it's nearly ready, reduce heat, toss in a few sliced green onions and some thin slices of your roast. Cover for a couple of minutes...just enough to warm the meat, and serve. Mmmmmm....(Just tell me when it will be ready...I'll be there!
