Easy Broccoli Soup
Got to playing around in my kitchen today and came up with this soup which turned out to be not only delicious but very filling. It's very reminiscent of French Canadian Pea Soup which I love! The recipe makes two servings with these totals per serving (1/2 of recipe):
Calories: 154
Fat: 8 g
Carbs: 6 g
Protein: 15 g
1 small can Campbells Chicken Broth with Garlic and Herbs
2 cups of chopped broccoli (including stems)
3 oz (leftover) Pork Chop cut into small bits
Simmer broth and pork until pork is very tender. Add broccoli and simmer until its cooked. Cool in pot. When cool, pour into blender and puree. Reheat and serve. Yummmmmm!!
It was serendipity that is responsible for this soup. The pork chop was a leftover because with recent dental surgery, I had difficulty chewing it. I was focused on finding a way to use it and be able to manage it. I think it's the pork that gave it the Pea Soup like flavour.
