Rob,

I finally had a chance to try the lemon curd! My first attempt in the microwave, turned out lumpy, as Azure said. So I looked in Martha Stewart's book on pies and tarts (puchased pre-lc, but it does have a couple of recipes I adapted to LC) and found the lemon curd recipe. It's basically the same as yours, but you cook it in a saucepan. It was delicious. I used 3 eggs and 1/4 cup of lemon juice, which made enough curd to fill the almond cake, which I cut in half horizontally. But the curd was so good I could have just eaten it like pudding.

Thanks for the inspiration; I hadn't thought of trying to make this lc, and I have always loved it.

Hi Karla,

glad you liked it as much as I did , yumm yumm !!!!

When I do it in the micro , I do it on very low heat and take it out every few seconds to stir it around . That stops it from going lumpy . Its just that doing it in the micro makes less of a mess and I am very keen on keeping mess to a minmum .

Is almond flour a product you purchase, ready to use; or do you just grind up almonds?

I see your measurements are in grams...where to I learn how to convert them to teaspoons or tablespoons???? Thanks!

you can buy almond flour which is just ground almonds . OR , if you are adventuruous you can make your own . Here's how,


buy plain almonds and blanch them by placing in cold water and bringing it up to boil leave to boil for 1 minute and strain off the water . Then you simply pop each almond out of its skin . A bit labour intensive but good exercise lol .

then you place them on a tray at 175deg C in the oven for 10 minutes till they dry out ,careful not to burn them .

Then use them as you want by grinding quantities in an electric coffee grinder and voila you've got almond flour . Keep the rest to use at a later date when you want more .

How much is 100 g of flour. and 25 g of butter, im not a big baker ah...

I want to make this though, I assume this is a single serving.

Just in case this helps, I have found a living encyclopedia with my search button for the internet. I typed in what I need for recipes, like "conversion metric to english".
Here is one of many, many great sites to help you with it.

Hello,

I did the conversion a while ago. Great Recipe. I have made it in the microwave and in the oven as muffins using mini muffin tins. I also tried it as oven baked mini muffins with finely ground pecans - very nice, almost maple tasting and sweeter than with almond flour. Here is my conversion. I think the debate about the actual number of carbs goes on. The tough one to call is the almond flour - I think it varies depending on how finely ground. I think it is is about 7.5 carbs for one cup of "home ground" almonds.

I make it in one of those 6" x 6" x 2" Glad microwave-able containers

4 TBS melted butter
2 egg (1.2 carbs)
Add
1/2 tsp Vanilla
2 TBS Splenda (3carbs)

In a separate cup/bowl mix
2/3 cup almond flour (5.5 carbs)
1/2 tsp baking powder.

Add flour mix to the egg mix and stir together. Microwave for about 2 minutes. About 11 carbs for the whole thing.

Real oven baked version: These are awesome!
Preheat oven to 400 degrees.
Divide batter into 12 mini muffin tins or 6 regular size. Bake for 12- 18 minutes – they get a little golden and spring back if you press lightly on the top when they are done. Try adding a few blueberries. Enjoy and thanks again Rob.

Hi,

THis recipe sounds good and easy, I llike the easy part the best! Can't cook. I can't find almond flour. I finally found Atkins bake mix though, could I use that?

Please let me know, and if so, what would the U.S measurements be?

Hi Jacki,

Almond flour is just finely ground almonds. You can do it yourself in a food processor or clean coffee grinder.

would a small (plug in type) food grinder work also or does that have not strong enough blades?

I just had this for breakfast and it was terrific! I used pecans that I had in the cabinet, just ran them threw my small chopper. It had lots of texture, like a banana nut type muffin and was delicious! I put some cream cheese on top.

I just used ground almonds haven't ever seen the almond flour.
BUT I will say these are trully AWESOME
I baked them in the oven, made 9 small cupcakes. I will try different flavorings this time I used Vanilla. I brought one to a friend at work and she thought they were good too.
My daughter mentioned they would make a good bottom for a shortcake which I will try as well. This is my first "cake" on this WOE. It gets easier as you experiment with new recipes.
