Thumbs up The Yummiest Stuffed Chicken breasts

This is the most amazing chicken ever and it is soooooo easy!!

For portion control used small to medium size chicken breasts.

You can either trim down or leave as is but give the breast a quick mallet out to flatten the breast a wee bit.
In a bowl mix together chopped (small) sundried tomato's, parmesan or mozerella cheese (feta works too), mushrooms and any other things that take ur fancy .... olives, aubergine (eggplant), capers, artichokes, endless possibilities mix together in the bowl with salt and pepper.
Put a decent amount in the middle of the chicken and roll up securing with a tooth pick. You can Barbeque, grill or bake this chicken with a bit of olive oil ur preference ... this chicken is amazing.

You can also serve with a sourcream and pesto sauce made simply but adding garlic pesto and sour cream into a pan with a teaspoon of chicken stock and salt and pepper.

The chicken is yummy served hot with salad or cold for snacks yum yum eat up!!

oh yea adding a bit of fresh bazil, or any other fresh herbs is yummy too

Deeelish!

I made something very similar the other day....I pan-fried chicken breasts to brown them...removed them from the pan...then used the pan to sautee mushrooms and garlic...deglazed the pan...added a tablespoon of pesto and a tablespoon+ of garlic-herb creamcheese...added water/cream to make a sauce...added back the chicken and finished off in the oven. YUM!!Oh, yeah...I sprinkled bacon on top as well.

I think adding sun-dried tomatoes or using sun-dried tomato creamcheese would also be awesome!
