I KNOW that when it is 95 out that if I'm going to turn on the durn oven, it had better be worth it! BAWDY'S IS WORTH IT

I KNOW that when I am really doing low carb right, this is the standby friendly recipe. It has the most induction friendly ingredients.

I KNOW that if i keel over dead, it will be from cream cheese that is 2 months old!

That's how long I've been doing "upper carbs" instead of basic carbs to get my daily 20. I also re-committed & am in the process of getting clean.

Oh yes, Bawdy's cheesecake is worth it for sure. Made some yesterday. Knowing danger when I see it, I did a 1/2 recipe and put it in a small loaf pan. Held some of the vanilla batter back and added cocoa, did the marbling thing with it.
Because it's in a loaf pan, I can cut neat little slices -- I figure I'll get 8 or 10 small servings out of it. Tomorrow I'm having a dinner guest, and I'll serve it (the cheesecake, that is) up with blueberries, drizzled with a bit of daVinci SF raspberry syrup.
It really is divine, Bawdy! And you know the best thing? MY HUSBAND DOESN'T LIKE CHEESE CAKE!

That's more for you! Yippee!!!

I made one over the weekend, too. I didn't have sour cream in the house, but I had Greek yogurt, so I used that instead. Yeah, don't do that. The batter was so yummy, but the cake itself fell flat (even with a crust it was not even 1 1/2 inches high). And the crust was lousy! I used 1 cup ground almonds, 1/4 cup Splenda, and 1/4 cup melted butter. I baked it for 10 minutes before pouring in the batter. It ended up being really mushy, and yet would stick to the pan instead of coming out with the piece of cheesecake. The pan is teflon, and I sprayed it with Pam, so there's no reason it should have stuck to the pan like that.

So, next time it's sour cream and no crust!

I use a small springform pan that measures 9 inches across.

I just made this one yesterday and it is sitting in the fridge right now waiting for tonight to have as my Birthday Cake!
I used 1/4 cup Splenda and 1/4 cup Torani SF English Toffee Syrup and I made it with the nut Crust, but instead of Splenda I used the 1/4 cup unsweetened Coconut flakes. I also made a Strawberry Topping out of Frozen Strawberries, Splenda, 1 tsp Lemon Juice and 2 TBSP Orange Juice to go over it. I will be serving with some Cool Whip on the side and a Cup of Decaf coffee
I will come back in here and let you all know how it was

Bawdy, Bawdy what have you done? Your cheesecake thread has taken on a life of its own!

My latest crust variation is to use finely ground brazil nuts for the crust. They are so flavourful and delicious! And I like adding a teaspoon of cinnamon.

Hey, I just came up with the recipe. You guys are out of control!

I still haven't found a nut crust recipe that I like, which makes me hesitant to make another. I don't mind it without the crust, so that's good. Hubby likes a crust, though, so at times I've thought about just making a graham cracker crust using Splenda instead of the sugar. It's not THAT many carbs.

When a bunch of low-carbers start going on cheesecake, LOOKOUT!

Have you tried a brazil nut crust yet, Bawdy? The almond crust was my least favourite part of the cheesecake, and I started skipping it. I found the taste a little weird. Then I did brazil nut. Big improvement! The last time, I was running out of brazil nuts, so I topped up with macadamias. That was delish too.

I've been reducing the Splenda in the crust, too, and adding cinnamon.

I think reverting to graham crackers (ok, even if the number of grams of carbs isn't that big) is a cop out.
