It would depend on if you have a fridge or cooler but probably could do...

hot dogs with dill pickles as a bun
a raw veggie tray with a low carb dressing
bacon
rolled up sliced deli ham and cheese
cheese sticks

Love this post. I never know what to bring to outdoor events like camping or the beach.

... also maybe tuna fish in lettuce wraps but again, it depends on what you are bringing for equipment. Also, some chilis are low carb. It depends on the brand and type.

... just thought of this... you could make a greek salad but just cut up the vegetables before hand in a big container and then bring feta cheese and olives separately in your cooler and add that right before you eat it. Or do the same thing with a cobb salad... keep the veggies cut up in a container and then add the meats from your cooler right before you serve. It could be tough only because you would need a fridge or a big cooler for everything.

To answer your question, we have a camper with a fridge/freezer and 4 burner propane stove. It also has an outdoor grill.

Hey, fun to get this started! The ideas here are for car-camping, no fridge or freezer available, and not hiking where you pack in your food.
I make a batch of chilli and freeze it rock hard. It helps keep everything else cold (like steaks in a cooler for the first night) and then I thaw/cook it the third night. Same with hotdogs or bacon - I freeze what I can before and we eat it as it thaws, but keeps a long time in the cooler. Hard boiled eggs and cheese keep well and good for lunch. A batch of low carb “muffins” (basically ground flax, almond flour and eggs ) slice up to put nut butter on or cheese and pickles on when others have bread or crackers. Have a few fresh and a few frozen for later in the weekend.

Brazil nuts, pickles, pork rinds, olives, jerky all are good snacks.

Hi there, Blue! Thank you so much for the ideas! How brilliant to use the frozen chili as an ice block. And, I LOVE flax muffins.

Here's what I ended up bringing:
Meals:
Steak for Friday night and dogs/brats for Saturday night
7 layer salad to use as a dinner side
Keto pancake batter for Saturday morning
Low carb Mission tortilla wraps (it has been a LONG time since I bought these, and realize they're not for everyone) for wraps (made the night before) and breakfast burritos.
I precooked sausage links, shredded cheddar, and cracked eggs into a plastic container for the burritos the night before we left.
Dark chocolate dipped strawberries for dessert both nights

Snacks:
Boiled and deviled eggs, celery and cherry tomatoes for my mom's dip (sour cream, cream cheese, mayo, spices, bacon), pecans, and Whisps "crackers".

Saturday afternoon I made a snack plate in lieu of lunch: 3 types of cheese, summer sausage, a few dill pickles, black olives, nuts, some of the Whisps and a bit of dried fruit for DH.

We did NOT go hungry.

for car camping:
I love doing chicken sausages over the fire!
Veggies to cook in a foil pack
Veggies and dip- mini bell peppers and grape tomatoes don't need refrigeration.
For breakfast, we typically make an egg/cheese/veggy scramble
We usually bring snack stuff like deli meat, Turkey jerky, nuts, seeds, , packets of almond butter, berries....
And I love to pack diet Swiss miss to have cocoa by fire while others are having Smores or whatever.
Spiked seltzer- these are about as alcoholic as a light beer. The brand i love is truly and each can has 2 carbs.

Robin, what a fantastic idea about the Swiss Miss. I'd never thought of that.

Planning another trip. Our last trip I made a special trip to the grocery store. This trip I'm shopping from our pantry and fridge:

Ribeye
Ground beef
Eggs: Boiled for snacks and mixed up ahead of time for scrambled
Shredded and cubed cheese ahead of time
Make keto pancake batter ahead of time
Frozen blueberries for the above
Pork rinds
Salami, pepperoni, pistachios, dill pickles and olives for snacks
Misc: Butter, sf syrup, sour cream, HWC

I just need to buy LC tortillas (I'll make wraps for the trail out of the canned chicken we already have on hand) and fresh strawberries and we're good to go.

We love taking out pup and camping, too- so thanks for starting this thread. There are lots of great idea!

For the Swiss miss, make sure you get DIET (has 4 carbs) not the no sugar added (has about 10 i think).
