They finally brought the salad bar back at my work. I have baby spinach, tomatoes, and tuna most days. Sometimes I'll throw in some raw cauliflower. DH hates tuna, so I rarely have it at home.

I often skip lunch or breakfast, today I skipped breakfast.

For lunch, I love making sandwiches using big lettuce leaves instead of bread. Today I made one with Oscar Meyer Braunschweiger with Kraft Mayo, Provolone Cheese and one slice of onion.

Yesterday I grazed as opposed to an actual lunch.

2 string cheese
1/2 cup of cauliflower tabouli
A siracha chicken epic bar

A ton of Dr Brown's diet cherry soda

Today:
Flackers with eggplant tapenade
2 string cheese
More cherry soda

Snack- a packet of sunseed butter a friend gave me, after he went to a health food expo

I made some vegetable beef stew a few days ago, and today I turned it into Thai coconut soup. DH is sick and I got that itchy-nose-and-throat feeling, so I'm in full-on cold-fighting mode. Hopefully it won't progress.

Thai coconut green curry with chicken and tons of vegies, (Thai eggplant, red, green, yellow and orange bell pepper, water chestnuts, bamboo shoots, okra, red onion, Thai chilies & fresh Thai basil). I'm guessing about 20 total carbs per bowl and I had a bowl and a half so I guess maybe I cheated, but that's all I ate today - it was great! It didn't send my BG very high so maybe there is something to the "net carbs" theory.

Yesterday was a whirl wind- had a homemade coconut water popsicle and at some point some bbq protein chips (like quest but not as tasty- brand is wow).
Diet cherry soda

Today-
Scoop of egg salad
Bag of trader Joe's dehydrated broccoli crisps (love these!)

A big chopped salad with Romaine lettuce, Vidalia onion, red cabbage, radishes, pickles, olives, tomato. Mayo and horseradish mustard mixed together as dressing. A couple of pieces of Kentucky grilled chicken (thigh and drumstick) on the side.

2 oz smoked gouda
Oz trader Joe's seeds and beans mix (a little carby at 10 after subtracting 4g fiber, but fit in my macros, and it's really good)

Snack- most likely a health warrior chocolate pb Chia seeds bar
