I did this last week, and forgot to reply. I did a molten version: 2 heaping Tbsp cocoa powder, bit of baking powder, 2 drops of Sweetzfree, 1 tsp granular Sugar Twin (cyclamate), a few drops of vanilla extract, 1 egg, a pat of butter, and a square of 85% Lindt dark chocolate. It was really good. Rich and satisfying. Definitely a keeper.

Sounds amazing Kristine. I can really only do xylitol or stevia and have to skip the butter.

I have the raw cacoa and 2 TBSP seems like a bit much for me, might try 1 1/2 next time.

Nancy,

Thanks so much for this recipe. My 13 year old daughter has been following LCHF to lose the excessive amount of weight she was carrying and is now maintaining. Even thought she has increased her carb intake, she doesn't want to start eating the crap food again but she wanted to find some LC "sweet" treats, so I made her this. SHE LOVED IT!!

2 Tbl of unsweetened Cocoa powder
1/2 Tsp of baking powder
1 Egg
Equivalent of 2 Tbl of sweetener, wet or dry, doesn't matter.

In a cereal bowl, mix dry ingredients together with a fork. Crack the egg on top. Kind of beat the egg in place until yolk and white are pretty well blended. Then begin mixing the egg into the dry ingredients. If you use a dry form of sweetener (like splenda) you'll probably need to add 1 Tbl of water, cream, oil, something like that. If you used a syrup sweetener, like Torani on Da Vinci, you can most likely skip that.

Microwave for about 1 minute. Until just set up, you don't want to overcook!

Variations, mix a few bits of very dark chocolate in, I shave some off a 85% bar. Use various flavors of syrup. Throw raspberries in, increase cooking time possibly. Put a pat of butter on top after cooking.

Will be adding to my owl list
