Default no bake chocolate cheesecake recipe for one -- yum

I have been trying and trying to come up with an easy recipe that makes one serving, as portion control can be an issue for me. I think I've found it...

2 oz cream cheese
1 square lindt 85% chocolate
1 teaspoon heavy cream
1 packet splenda
1 tablespoon da vinci vanilla

Here's what I do:
melt the square in microwave for about 30 seconds (it won't melt quite all teh way in my microwave)
add cream cheese to the chocolate and put it in microwave another 30 seconds.
add remaining ingrediants..
stir well
cover and put in fridge until chilled.

I usually make this when I'm making dinner, and then know that I have something waiting for me after I get the kids to bed. 5ish carbs by my very quick count. enjoy!

that's what I like about it too. I've read others.. and stop at the ingredient list... seems like too much trouble. I like this one because it's so easy.

I'm a 5 or less ingrdient type of girl! All the recipes seem so complicated and I just don't have the patience. I'm so glad you posted this! My next trip to the store will have these ingredients on the list!
I have some whipped strawberry cream cheese in the fridge...I wonder how that would work w/o the chocolate. I need to check the carbs on it tho...

We make "choc mocks" a bit similar sometimes. Typical mock danish recipe but heavy on the cream cheese (1 egg, 2-3oz cchs), add chocolate (either cocoa melted or square melted), vanilla and sweetener. (I might add that for extra decadence, use a big knife to chop a block of baking chocolate (ghirardelli is best in my taste tests) into tiny pieces to also mix in, and add a handful of frozen wild blueberries.) The egg and cchs give it a decent protein amount so it's not like just a few carbs. We usually use sweetzfree for the sweetener, sometimes I add stevia glycerite as well. (I have and use davinci but it takes more liquid for less sweet intensity.) Me and the kid sometimes make one of these and then split it.

PJ,

Do you bake it? In a muffin cup? Sounds good!

I bet the words "no bake" wouldn't be in the title if you baked it.

Oh wait, you're asking about something else, my bad.
