mmm barb- wings sound good!

I've been tasting all day - cooking all afternoon, Roasted Broccoli, Green-Onion (Cauliflower) "Potato" Salad, Cheeseburger Quiche, - it's dinner time and I'm full. May have a few spoons of the cauli salad but that will be it. Maybe I'll make a cup of cocoa, too.

Salad w/ kale/chard mix, spinach, sauteed tofu, hardcooked egg, avocado, tomato, bacon pieces, sharp cheddar, cheese crisps, and homemade Ranch.

A pound of salmon and a half cup of French cut string beans, buttered. Saving a coffee frothie for a little later with caramel carb free flavoring blended with a quarter cup of 1% milk. Maybe with ice, maybe hot...we'll see.

Salad w/ kale/chard mix, hard cooked egg, cherry tomatoes, bacon, sharp cheddar, cheese crisps, some steamed broccoli and homemade Ranch - that was the last of the kale mix and added the broccoli because I really didn't have enough of it left to make a dinner sized salad... Have to shop!!! Will have to find an alternative to salad for dinner tonight... - this was last night's dinner.

Reward Meal - 2 cups romaine with 1 celery stalk, 1/4 small cucumber and 2 tab. of a blue cheese yogurt dressing. Protein is about 14 oz. (raw wt) of shrimp, boiled and then made into salad with 1 tab. mayo, 1/4 oz. red onion, then into 1 small whole wheat roll.
1 cup no-salt added green beans with 1/2 tsp. no-salt added butter.
1 oz. half and half with my coffee.

I made something called a Crab Cocktail with Baby Avocados last night, instead of the avocado boats on a bed of lettuce per recipe instructions, I just made it into a salad, tossed everything together. It was good!

My dinner last night was the same as breakfast this morning - too hot to eat so had a piece of bacon and a few spoons of Cheesecake Pudding with cocoa... this AM I just had no time.

Salad of romaine, cucumber, scallion, celery, tomato, a blue cheese yogurt dressing. 1 chicken breast panfried then baked with a homemade alfredo sauce of fontina and heavy cream, sautéed garlic. Boiled broccoli and miracle noodles rice.

My dinners are pretty boring but they are good. Another version of a big salad - red butter lettuce, red onion, radish, tomato, sharp cheddar, cheddar cheese crisps, bacon, hard cooked egg with homemade Ranch dressing. I sleep really well when I have a salad for dinner - they are pretty big, I use a mixing bowl.
Plus it's hot, the kitchen is hot and I don't feel like doing much after work - tired out.

Chinese buffet - skewered chicken, broccoli, green beans, spinach and cheese, and two chunks each of pineapple/cantaloupe/honeydew for dessert. Unsweetened ice tea to drink. One of my weekly decadent meals out in a restaurant.
