Last night was Chicken with Caramelized Cauliflower and Green Olives, tonight and the rest of the week will be Tuscan Sun Chicken Salad made with the chicken/cauli leftovers - new recipes - it was good!

Nice t-day picture, Kristune. Hope you enjoyed it!

Have been away a couple weeks here, work has been nuts. But wanted to mention the awesome shrimp lettuce wrap tacos i had with cabbage slaw and a little peach salsa. Yum!

2 nights ago we had roast chicken with green beans and salad, and last night was leftovers, but I swapped siracha tofu for the chicken.

Big dinner after a fast. T-bone steak, cucumber, cottage cheese, salad with ranch dressing and shredded cheese, and pork rinds. For a desert I had heavy whipping cream with peanut butter powder whipped in.

Fri- was on road so I had a sirach a chicken epic bar, a cottage cheese cup, a pack of dill cashews and a baggy of carrots.

Saturday- at a wedding, sauteed veggies- zuchinni, crookneck, carrot, onion
Roast chicken
Too much champagne
Ate packet of almond butter before bed

Sunday- lemon chicken
Asparagus

I am about to sprout feathers. Time for dish or seafood tonight!

1 bowl Mexican Noodle Soup (using chopped Shirataki angel hair) - 6 carbs

1 serving low carb Mexican salad with Kraft Spicy Ranch - 4 carbs

4 skinless chicken thighs smothered in mole sauce - 8 carbs

I cooked a big pan of oven baked Pork Chops with pineapple, soy sauce, balsamic vinegar, garlic powder and black pepper. A little carbie but I've been very good
While that was in the oven I cooked 3-4 slices of bacon in a pot, then put in 1/2 a head of cabbage cut up and it was sooo good with the pork chops!

I had leftover eye of round steak that I did in the pressure cooker the other night. On the side, I had the mushrooms that I cooked along with the beef, I turned the broth into gravy, and I nuked a sweet potato with some butter and herbs.

Calamari (squid) rings, pressure cooked in a tomatoey sauce with capers and olives, over tofu shirataki fettucini with lots of chopped fresh parsley.

This was a recipe from an old cookbook using my old stove-top pressure cooker (the kind with a wiggle-valve on top that spit and spewed steam during the cooking process ). I now have an Instant Pot, so played around with time and ingredients .. de-carbed quite a bit, and adding parsley at the end instead of cooking into the sauce to preserve its nice bright flavour. The calamari came out perfect; firm but tender .. not chewy and rubbery .

I'm having the leftovers for lunch .. just tried a little test piece to see how it survived being in the fridge overnight. Excellent .. in fact, the sauce tastes even better with time for all the flavours to mingle.

Ooh, sounds delicious Doreen!

Monday night we had guests, so we had lobster tails, asparagus, and green salad. It was delicious, but I cut my finger pretty badly splitting the lobster, so I guess he had the last laugh.

Tuesday was garlic lemon shrimp with green salad and leftover green beans.

Wednesday and Thursday i kind of nibbled through- was working crazy hours- so an epic bar here, bell pepper and dip there, a handful of nuts/ seeds.....

Meme, that sounds so delicious! Everybody is making me hungry...too little to eat today - another day stuck at the garage - unplanned, so thankful for the Atkins shake - it's days like these they really come in handy.

Last night and tonight - spring greens w/coconut curry chicken cubes, cherry tomatoes, 3 cheddar mix, cheese crisps, avocado, bacon bits and Green Goddess Dressing. Kind of a wild mix of flavors but it's really good!

Last night I ate out with my husband at Golden Corral (gasp). I drank unsweetened iced tea and had ribs, brisket, smoked chicken, spinach, green beans, and cauliflower. For dessert, I had a few chunks of melon and a cup of decaf coffee with half and half.

Local grocery had a special one day sale on whole beef tenderloin, $5.99 a pound about a week ago and ran out, I got a rain check which I filled today.

I tried this recipe for filet mignon:

It came out just like the picture - 0 carbs

I served it with a serving of selected whole green beans cooked down in chicken broth with bacon and the drippings. - 2 carbs

I also sauteed some mushrooms in butter, olive oil, garlic and J.E.S. Teriyaki Sauce. - 5 carbs

That was my meal for today - OMG it was GOOD! I savored every bite
