Default American measurements - "cups"?

Hi folks,
I'm new, so I'm quite anxious to get it right.
I'm in induction of the Atkins diet, and confused about the amount of salad veggies I should be eating.
The guideline is "two cups" of salad veggies per day. Does anybody know roughly how many grams or ounces a cup is eqivalent to? Eg how much would a cup of cauliflower be?
Thanks!

Unfortunately, the answer to how much in weight in a cup is .... it depends! Cups measure volume and one size definitely does not fit all - the amount of lettuce that fills a cup is a lot less in weight than the amount of cauliflower filling the same cup.
Weight is really the only consistent measurement over time and I wish our friends in the US would change to using grms or even ounces . Until then, buy a set of cups, measure what you need of typical ingredients and then weigh that amount. Once you have a note of the weight of each veg you use, you will never have to 'cup' it again.

I agree it is difficult for us Brits to comprehend measuring things like lettuce by volume. How much you squish it down could double the amount ............

There is a good way to find out how much a US cup is reckoned to hold of any particular food item. Go to http://www.nal.usda.gov/fnic/foodcomp/search/
and type in the food you want. Say cauliflower. The page it returns will give you options such as raw or cooked etc. Select one and the next page will tell you how much 1 cup of this items weighs in grams. Raw cauliflower happens to be 100g per cup

Happy converting!

For an easy fix, get yourself down to Lakeland Ltd, or John Lewis and pick yourself up some cup measurements and if it's helpful, spoon measures too. Nigella lawson does some cool looking sets, if a little cumbersome and on the big side.
