Default Atkins Banana Nut question

Hi,
I want to make the Atkins Banana Nut Muffin mix that I have. I'm wondering if anyone has made them as mini muffins and if so, how many did it make. I haven't tried these yet, but I've had the mix for awhile and I want them to freeze as a snack.
Thanks,
Alli

Hi ali,

Pour water into one of the cups of the tin you usually use to make muffins in, up to the level to which you normally would add the batter. Pour it out into a measuring cup - or some other vessel with a lip - and pour it into the cups of the mini muffin pan you are going to use. If it fills three of the cups for example, the amount of batter you would be using would make six regular sized muffins, then you would have eighteen mini muffins.

Karen
