Default Broccoli Gruyere Casserole

Found this in Low Carb Living magazine. Was very good!

2 pounds broccoli, stems and florets
1 medium onion, finely chopped
Vegetable oil spray
4 large eggs
2 cups heavy cream
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
1/3 cup grated Parmesan cheese
4 ounces grated Gruyere cheese, divided into thirds

Preheat the oven to 375* . Bring a large pot of salted water to boil. In the meantime, cut the broccoli florets into medium-size pieces, and cut the stems into 1/2-inch pieces. Add the broccoli to the boiling water, return to a boil, and cook 2 to 3 minutes, or until crisp-tender. Drain the broccoli, then run it under cold water to stop the cooking. Drain again, pat it dry, and cut the florets into slightly smaller pieces. Set aside.

Heat butter in small sauté pan over medium heat and cook the onion until golden, about 7 minutes. Cool slightly. Coat an 11-by-7-inch baking dish with vegetable spray. In a large mixing bowl, combine the broccoli and onion. In a smaller mixing bowl, combine the eggs, cream, nutmeg, and salt. Stir in the Parmesan and about 1/3 of the Gruyere. Add this mixture to the broccoli mixture and fold together well. Transfer the broccoli mixture into the pan and top it with remaining Gruyere. Bake until the casserole is set and the top is golden brown, about 50 minutes. Cool the casserole for 15 minutes before serving to allow the dish to set a little.

6 servings, 7 net carbs, 488 calories. 18g protein.

Made this tonight with fried sausage. It is excellent. I have to admit I substituted Asiago for the Parmesan since I had it on hand. It is wonderful!
