Default Cauli "Rice" or "Cous Cous" Pilaf

I got several requests for this recipe so thought I'd just go ahead and post it:

Cauli-"Rice" or "Cous Cous" Pilaf -- 1 serving

3/4 raw cauliflower pellets (raw cauli, pulsed in FP to desired size)
1/2 C chopped mushrooms
2 TBL chopped onion
2 TBL frozen baby green peas (optional, or use something else green, like scallion or parsley)
butter
salt, pepper & garlic powder, to taste (or use fresh garlic)

Sautee the mushrooms and onion in butter until nicely browned. Add more butter, add cauliflower and peas, and sautee until cauliflower is to desired tenderness and peas are warmed through. If you're using scallions or parsley, add it at the very end so the color will stay bright. Season to taste and serve hot.

10g total carbs, 6.5 net carbs

I'm glad to see this, because I was just thinking of trying to fix cauliflower so it would be more like rice.

I don't have a food processor, so am thinking of grating the cauliflower to small pieces, then sauteing in a pan of butter or olive oil. Would this work, do you think?

Some do the grating, either by hand or with FP blade attachment, and they say it's very good, too. Give it a go and post back with your results!

I saw this recipe just after I used my califlower in fauxtatoes but it really sounds delicious. I am growing cauliflower this summer so I can try all the recipes and this is one that is at the top of the list right under fauxtato salad!

Yes, I will, and will post back. I love rice (brown or white), but if this is a good substitute, I can stay on plan better.

I don't how this kind of "rice" will do with gravy, but as a stand alone dish like pilaf or fried-rice with other flavors added, it really does substitute nicely.

Cauli rice does fine with gravy, but you don't want to store it in the gravy. Then it starts building an ark and looking for olive trees.
