Default Cauliflower/Artichoke Bake

I made this last night and it was fabulous. I don't post often but get inspired by many of the great recipes. I hope someone tries it. It is very good...

Cauliflower/Artichoke Bake

1 head of Cauliflower, cut into florets
1 bag of Trader Joe's Frozen Artichoke Hearts, thawed
2 heaping Tbsp of sour cream
2 healping Tbsp of mayo
1 to 2 Tbsp of cream cheese
2 handfules of parm cheese, plus extra to put on top
1 to 1.5 cups of mozzerella cheese, plus extra to put on top
3 cloves of garlic
Splash of half and half (prob. would use soy or LC milk next time)
S&P to taste
Parsley to taste
Onion powder to taste

Steam Cauliflower and mass (I do not boil b/c it adds too much H2O) in bowl; steam artichokes and chop up (I did in microwave witha little H20) and thoroughly dry then add to cauiliflower. Add rest of ingredients and place in a glass dish(my preferred method - can use whatever you want) sprayed with Pam.

Bake covered at 375 to 400 degrees until bubbly (about 20 minutes) then top with parm and mozz cheese. Cook uncovered until cheese is melted and browned a bit on the edges. Let cool for 5 minutes.

I served with grilled turkey sausages and I have to say this would go will with any meat, chicken or fish. I will be making this often.

I am not good with carb counts but would love someone to try.
