Thumbs up My "Best So Far" Attempt at Mashed Faux-tatoes

I'm not a huge cauliflower fan, so I was unimpressed with plain mashed cauliflower. Nor do I like plain mashed squash - it's quite carby, anyway. So: I decided to mix 'em together, and the result I got was delicious.

1 very small acorn squash (I've been using ones about the size of a large apple)
1/2 package of frozen cauliflower (or fresh equivalent)
1 tsp chopped onion
1/4 cup cream cheese

- Halve the squash, remove the seeds (toast them for a tasty snack), bake for about 45 minutes at 350.
- Boil or steam cauliflower with onion until nice and soft, drain
- Mash squash, cauliflower and cream cheese together. Top with butter, salt, or ranch dressing.

Yields four side dish servings.

My *very rough* nutrition estimate, based on 2 cups of cauliflower and 1 cup of squash, no toppings: (yours will vary)
79 Calories
5 g fat
7 g carbs - 2 g fiber = 5 g net carbs
3 g protein

i've been looking for something to add to plain mashed cauliflower to cut the taste a bit (I know, I know) - and didn't think of winter squash - I did think of carrots though - just a few nuked baby carrots to add some flavor? What do you think?

I've done that, and it's pretty good. I actually used to do that pre-LC when I made mashed potatoes.
