Default Pine Nut Parmesean crusted Pork Chops

The amounts are guidelines, I was measuring by hand-fulls

Preheat oven to 425
3 Center-cut pork chops (~3/4" thick)
1/2 c pine nuts
1/2 c almond flour (finely ground almonds)
1/2 c grated parmesean
kosher salt
thyme
rosemary
cumin

Grind pine nuts in a blender until fine, combine all breading ingredients in a bowl. Dry pork chops with paper towels then coat with breading. Bake in a shallow pan 10 minutes. Turn and bake for another 10 minutes.

These were so easy to make, came out moist and my non-lowcarb fiance loved them.
