Where the heck can you buy tallow these days? I went looking for it a while back and came up empty.

Judging by the response so far, I guess you can't buy it! You'll have to render it yourself from beef fat (presuming you can find it!) -- kinda like lard with no additives!

I render it myself, along with lard, from fat I get from the ranch. It takes a bit of time, but it is extremely inexpensive. I have heard that some people get fat free from their butcher. It's worth asking around.

I like roasting vegetables in olive oil, but that's definitely "overheating". I tried it today with almond oil, which is supposed to take higher temps, but it tasted different. I might try canola oil or something.

OTOH, those roasted veggies often upset my stomach, so much as I like them, maybe I'd better just give them up. Except roasted French green beans, when I'm to the point where green beans are legal; those don't seem to bother me, for some reason. Anyway, maybe I'd better steam most veggies and maybe put a little olive oil on for seasoning.

Moselle, green beans are on the good for induction list - they're listed as wax or string beans. You could use unflavoured coconut oil for frying and then add the olive oil just before serving for the flavour.

I don't think so. String beans are a different plant, and it doesn't make sense that Dr. Atkins would have gone to the trouble to list one particular type of green beans instead of just putting "green beans" on the list if most of them were okay. Besides which, according to the glycemic index in his book, green beans have nearly as high a one as bananas.

Butter might be a good oil for roasted vegetables, but I would not know first hand.

Satya, I'll try that. I'm also going to try canola oil, I think, and add olive oil at the end as glendarc suggested.

I just looked green beans up online and found that they are fairly high carb by Atkins standards, so I'll have to wait till I'm past Induction to add them in. (I'm spending more than two weeks on Induction because I messed up during my first week.)

Hmm. Yes, I think with induction salads and cooked greens are the lowest for carbs. Zucchini is pretty low too. It's amazing how many carbs there are in things like onions and peppers.

Broccoli's low too, so I've been eating that and lots of salad. Oh, and artichokes.
